Perfect Holiday Chocolate Shortbread Cookies

Rich and delicious Chocolate Shortbread Cookies are a must for this Holiday Season. The batter is easy to make in advance and decorating them can be a fun project to do with children.

The Shortbread cookies have a rich and warm chocolate taste which comes from the combination of Dutch Process Cocoa and Black Cocoa Powder.  The black cocoa powder also creates a darker color that is more eye-catching and looks gorgeous with some simple decorations. 

To decorate these Chocolate Shortbread Cookies,  melt some white chocolate in the microwave, and using a fork drizzle lines quickly across the cookies. Feel free to top with some festive sprinkles or leave it as is. You can also dip half the cookies into the white chocolate and decorate with some crushed candy canes.

These Holiday Chocolate Shortbread Cookies are tender and crumbly. They are not dry but almost melt in your mouth as they crumble creating perfect chocolate and a rich taste.

How to make Chocolate Shortbread Cookies:

Cream together butter and sugar with a paddle attachment for a good 4-5 minutes. If using a Stand mixer, You may need to periodically stop the mixer and scrape down the sides of the bowl. Add both sifted cocoa powders and flour and baking soda and combine with a spatula. Use the spatula to scrape all of the dough from the bowl and place it onto a sheet of parchment paper. Take the parchment paper and gently roll the dough into a log shape. Roll the ends of the parchment paper so the log is covered completely. Place in the fridge for a minimum of 2 hours. 

Can Chocolate Shortbread Cookies be made ahead of time?

Another reason I love these shortbread cookies is that the dough can be made ahead of time. Simply roll the dough into a log shape and place it in the fridge up to one week in advance. When ready to bake, take the dough out of the fridge while you preheat the oven. Slice the dough into ½ inch thick circles and place evenly onto a baking tray.

What is Black Cocoa Powder?

Black cocoa powder a darker cocoa powder. It has smoother non-bitter taste, and we think it actually tastes much less chocolate-like, than common cocoa powders.

You can use all dutch process cocoa powder or normal unsweetened cocoa powder in this recipe, the black cocoa powder creates a darker color which is visually appealing.

Ingredients

  • 1 cup butter, room temperature
  • ½ cup granulated sugar
  • 1 teaspoon kosher salt
  • ¼ cup Dutch process cocoa
  • ¼ cup black cocoa powder
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup white chocolate ships, optional
  • Sprinkles or crushed candy canes, optional

 


Instructions

  1. Cream together butter and sugar with a paddle attachment for a good 4-5 minutes. If using a Stand mixer, may need to periodically stop the mixer and scrape down the sides of the bowl. 
  2. Add both sifted cocoa powders and flour, salt and vanilla and combine with a spatula. 
  3. Use the spatula to scrape all of the dough from the bowl and place it onto a sheet of parchment paper. 
  4. Take the parchment paper and gently roll the dough into a log shape. Roll the ends of the parchment paper so the log is covered completely. 
  5. Place in the fridge for a minimum of 2 hours. 
  6. When ready to bake, preheat oven to 350 degrees.
  7. Remove the cookie dough og form the fridge and cut into 1/2 inch slices and lay evenly on a lined baking sheet.
  8. Place baking sheet in the oven and bake for 16-18 minutes. 
  9. Remove from the oven and allow to cool. 
  10. Melt white chocolate in the microwave at 15 second intervals (removing and mixing with a spoon or small spatula) until melted. 
  11. Use a fork to drizzle lines across to dip half the cookie in white chocolate
  12. Decorate with sprinkles or crushed candy canes and enjoy!
