Easy Tandoori Chicken Tikka Bites

Tandoori Chicken Tikka Bites are easy to make by marinating chunks of chicken breast is yogurt and savory spices. This recipe including instruction for the grill, air fryer, oven and skillet. A perfect recipe for an appetizer or main dish for dinner.

This dish is simple to make but packs a punch of flavor. The marinade is made by combining: Yogurt; Chickpea Flour; Fresh Ginger; Green Chili (optional); Paprika; Cayenne; Garam Masala; Coriander Powder; and, Ground Cinnamon.

The marinade is packed with bold spices that tenderize the chicken and infuse it with flavor. After the chicken is cooked, you toss it lightly with some lemon and Chaat Masala. This helps create a wonderfully tangy and sour taste that intensifies those bold flavors.

What is Tandoori Mean:

Tandoori refers to a style of Indian cooking involving a clay oven or over charcoals. A tandoor is a large cylindrical oven that curves inward to concentrate the heat. The top is open to allow access and air. A fire is built in the bottom of the oven and the air inside can reach over 900° Fahrenheit.

What Does Tikka Mean:

Tikka refers to a style of preparing food involving small pieces of meat or vegetables marinated in a spice mixture. A food item is prepared to be cubed or bite-sized is referred to as tikkas.

What is Garam Masala:

Garam Masala is simply a spice blend. Many people believe Indian food is spicy, however, that is not true. While there are many spices used in this Tandoori Chicken Tikka, the only spicy ingredients in this dish are the green chili and cayenne, both of which can be omitted.

What is Chaat Masala:

Chaat Masala is a spice blend made up of coriander, cumin, mango powder, black rock salt, pepper, citric acid, and mint leaves. Chaat masala is definitely a spice blend I recommend people purchase. It provides this amazing tangy and sour taste that can help enhance many dishes. I love to sprinkle chaat masala on sweet potatoes, regular potatoes, yogurt, or sliced apples. Is Chickpea Flour necessary:

Chickpea Flour is a great gluten-free alternative to regular flour. It can a greater protein content and nuttier flavor. Much like all-purpose flour, chickpea flour helps create a light crust on the chicken which enhances the flavor and texture. 

While you won’t get the exact same flavor or texture, Chickpea Flour can be omitted in this Tandoori Chicken Tikka. The dish will still be fun and delicious!

How to Serve Easy Tandoori Chicken Tikka:

If you are planning on serving this chicken as an appetizer, take the marinated chicken and skewer it. Feel free to use small or large skewers. You want to skewer the meat prior to cooking. After cooking the chicken (more on that below), squeeze the lemon and sprinkle chaat masala on top. Serve with cilantro and mint chutney.

If you are planning on serving the chicken as an entrée, you do not have to skewer the meat. While it looks pretty and is a fun way to serve but is not necessary. After cooking the chicken, place it in a large bowl and squeeze the lemon, and sprinkle chaat masala on top. Toss the chicken in the bowl and garnish with chopped cilantro and serve with basmati rice,  Masoor Daal (red lentils), and cucumber raita.

How to Cook Easy Tandoori Chicken Tikka:

  • Grill– Use your BBQ or Grill Pan to cook the chicken. The grill should be very hot and cook for about 5-7 minutes on one side and then turn for about 4-5 minutes on the other side. The chicken should easily release.
  • Pan Sear– Spray a little oil on a cast iron pan and lay out the chicken evenly on the pan. Do not overcrowd the pan as the chicken will release water and steam the chicken instead of getting a nice char. Cook on medium-high for about 5 minutes and flip over until done, should be another 3-4 minutes.
  • Bake – Preheat the oven to 400 degrees and place chicken pieces spread out on a baking tray. Cook for 12-15 minutes.
  • Air Fry– Place chicken pieces in the basket of the Air Fryer and spray with oil. Cook at 375 degrees for about 10-12 minutes.

Ingredients

  • 1 lb chicken breast, cubed into one inch pieces
  • 1/4 cup yogurt 
  • 1 tablespoon chickpea flour 
  • 1 inch ginger, minced
  • 1 green chili, minced (optional)
  • 1 tablespoon paprika 
  • 1/2 tsp cayenne (optional)
  • 1 tsp garam masala 
  • 2 tsp coriander powder
  • 1/4 tsp ground cinnamon
  • 1 tsp salt 
  • 1 tsp chaat masala 
  • 1/2 lemon, juiced

Instructions

Marinade: 

  1. Cut your chicken breast into one inch pieces
  2. Mince fresh ginger and green chili (optional)
  3. In a medium bowl, mix together yogurt, chickpea flour, ginger, green chili, paprika, cayenne, garam masala, coriander powder,  ground cinnamon and salt.
  4. Add chicken and coat with yogurt marinade thoroughly. 
  5. Let the marinade rest for atleast 30 minutes or up to 8 hours. 
  6. Skewer the chicken cubes and cook. 
  7. Once the chicken had cooked, squeeze lemon on top and sprinkle with chaat masala and serve.
