Along with foods that remind me being home is something to be celebrated and to be grateful for. Bread pudding is one of those delicious breakfasts that I love to make at home. It is easily adaptable with different fruits and flavors.

This bread pudding is wonderful and delicious. There is enough for two servings so it is a perfect treat to make for yourself or your quarantine mate. Make it with my delicious homemade challah bread or store-bought challah, french bread, or brioche. Prepare the mixture beforehand and keep in the fridge until you are ready to serve and yeat. Who doesn’t like a treat waiting to go?

The compote can literally be made at the same time as your bread pudding is cooking. simply combine lemon zest, lemon juice, powdered sugar, cornflour, water and blueberries. Super simple and easy with pantry staple ingredients.
