Baked Salmon with Dill and Jalepeno

Easy to cook baked salmon made with fresh ingredients. A great lean and healthy week night meal.

Salmon is a oily fish rich in protein and omega-3 fatty acids. Omega-3 fatty acids help in lowering ones triglycerides, reduces joint pain, improves memory and lowers depression. 

I love eating fish but am not a huge fan of the smell. This is one of my favorite ways to prepare salmon. It is quick and easy in the oven and does not leave my apartment with any smell.

I combined minced garlic, jalapeño, lemon zest, dill with olive oil and lemon juice into a marinade. Place the marinade on top of the salmon after it has been pat dried. And then I cook it in the oven at 350 degrees for around 20 mins. Super simple and easy!

Ingredients

  • 1 pound of salmon
  • 4 cloves of garlic, minced
  • 2 tablespoon of dill
  • 1 lemon, zested and juiced
  • 1 tablespoon of olive oil
  • 1 jalapeño, minced (leave out seeds if you do not like spice)
  • sat and pepper to taste

Instructions

1) Pat dry the salmon filets and place on a foil lined and lightly oiled baking sheet.
2) Mix together garlic, dill, lemon, olive oil, salt, pepper and jalapeño and generously layer on the salmon.
3) Place baking tray into preheated oven at 350 degrees for 20-25 minutes. Should be flaky and cooked through.

Notes

PRO TIP: 1/2 pound of salmon per person is recommended. This recipe is for two servings
